Tilapia with pineapple rice

Aside from how good it tastes, this dish is incredibly fast and simple to prepare, and I usually have the ingredients in the pantry (well, except the green onions–I rarely just have those just lying around).  The recipe is from a magazine called “Clean Eating”, so in addition to all of the other reasons to make it, it’s very healthy too.  You know, so I can eat a bowl of ice cream for dessert 🙂  Here’s how to make it:

Tilapia with pineapple rice
White or brown rice, freshly cooked
3 green onions, white and light green parts sliced on the diagonal
8 oz. can of crushed pineapple, drained and juice reserved
1 teas. olive oil

Tilapia filets, one per person (this recipe is optimized for 3-4 filets, so increase or decrease the marinade as needed)
Reserved pineapple juice, should be about 3 T.
3 T. soy sauce

Preheat oven to 400 degrees F.  Place the filets in a 9 x 12 inch glass casserole pan.  In a small bowl, mix together the pineapple juice and soy sauce.  Pour over filets.  Place in oven for 10-15 minutes or until cooked through.

For the pineapple rice, heat olive oil in a non-stick pan and saute the green onions until slightly softened.  Add the rice and crushed pineapple.  Cook until pineapple is heated through.  Season with salt to taste, or add some of the marinade from the pan of cooked tilapia.  Serve and enjoy!
